Spring is coming. It is. I know the whole country is freezing to death and parts of the U.S. are hunkering down in anticipation of another crazy ass ice storm, but…spring is coming! We’ve just got to believe! Anyway. This is a nice, light recipe that’ll make you forget winter!
Pauly and I really enjoy these, and if you have sushi-loving kids, they’ll probably like them too. I only have about 2 of 5 who will eat them, but I don’t even care. They’re so yummy I don’t want to share them anyway. This delicious recipe combines the flavors of California rolls with the ease of a wrap! It comes together quickly and easily when you’re craving sushi but don’t want to go out, and don’t want to actually engage in the logistics of sushi-making.
Ingredients
- 8 whole wheat tortillas
- 8 ounces imitation crab
- 1 cucumber, diced
- 1 avocado, diced
- 2 cups cooked rice
- 3 tsp sesame seeds
Instructions
- Mix cooked rice with sesame seeds. (You can do this right in the pot the rice was cooked in!)
- Assemble wraps by placing a small amount of rice, crab, cucumber, and avocado on tortilla, then folding burrito-style.
- Serve with wasabi and soy sauce
