About a year ago, I discovered the magic of CAKE MIX COOKIES. Cookie making can be an elaborate art form, but sometimes you want quick and dirty! I always have a few boxes of cake mix in my pantry, and whipping up couple dozen cookies takes no time at all when using a boxed mix. Here’s what you do:
- Open boxed cake mix of your choice and pour into mixing bowl
- Add one egg
- Add one stick of melted butter
- Mix with a spoon until combined
- Bake into cookies!
So, so easy. We’ve done this with lots of different mixes, and it’s fun to mix in different things – our favorite is Devil’s Food Cake Mix with Reese’s Pieces! Today, we did Butter Pecan cake mix with butterscotch chips. The cookies were out of this world!
I love making fancy desserts with my kiddos, but this is something they can do completely on their own in just a few minutes after school. Try it!
