Have you ever had a tried and true recipe that you made all the time, and then you just stopped making it for awhile and eventually pretty much forgot about it? That’s sort of what happened here recently. My daughter Nikki asked if I would make bean dip for their friends coming over on Halloween. Bean dip! Of course! I have the bomb recipe for bean dip, I told her! “Well, why have you never made it for me??” Ooops. I don’t even know. About fifteen years ago, I made it for every party and get-together, and then I guess I just stopped making it. But no more! This is fantastic, and everybody always loves it. And it’s the world’s easiest recipe, which comes together in an hour or so in your crock pot!
You will need a couple cans of refried beans, a cup of salsa, and a brick of cream cheese. Throw it all into your slow cooker along with a few spices, and in just a little while, you have this magical, creamy, delicious bean dip that people will freak out over.
Here is the recipe.
Ingredients
- 2 cans refried beans
- 1 cup jarred salsa
- 1 brick cream cheese
- 1/2 to 1 cup shredded cheddar cheese
- 2 t. cumin
- 2 t. smoked paprika
- Salt and pepper
Instructions
- Combine all ingredients except cheese in slow cooker set to low. Allow to cook for about 30 minutes, then open lid and stir to combine. Cook another 30 minutes, then add cheese. After cheese melts, remove lid and serve with tortilla chips.
